The Rotunda Hotel has launched “Savor the Seasons,” a ten-cocktail menu that celebrates the fleeting beauty of each season. This is the first menu created by Michele Lombardi, the hotel’s new bar director, who took the reins earlier this year.
Pure Spirits and Seasonal Flavors
Lombardi and his team designed the menu to showcase spirits in their purest form. Each cocktail uses ingredients at the peak of their season. Lombardi said, “This menu is our love letter to the fleeting beauty of the seasons and the history of this beautiful building, which was once the headquarters of the Port of London Authority and served as a gateway between the East and the West.”
He added, “As flavors change with the seasons, so too does the menu. We invite guests to taste the seasons because some things are too good to last forever.”
Reimagined Classics with a Twist
All ten cocktails reinterpret classics with hyper-seasonal accents. Highlights include:
Pistachio Raspberry: A sour spin on the traditional cocktail, blending pistachio orgeat with fresh raspberry and citrus.
Fig Water: A fragrant floral soda featuring jasmine, Three Cents Fig Leaf Soda, and Cognac.
Almond Pineapple Mai Tai: Combines citrus botanicals and labdanum—from North Africa and the Middle East—with Taka Maka rum from the Seychelles.
These drinks evoke the hot days and cool evenings of summer, using bold yet balanced flavor profiles.
Sustainability in Every Glass
“Savor the Seasons” was created with sustainability in mind. The bar repurposes leftover ingredients from hotel operations as garnishes. Examples include:
Homemade Jelly: Made from plum jam served at breakfast.
Milk Flakes: Collected from the coffee service and used as a frothy topping.
This approach reduces waste and adds unique touches to each cocktail.
Menu Availability and Pricing
The Rotunda Hotel is now serving the “Savor the Seasons” menu. Cocktail prices range from £19 to £25 ($26–$34), while non-alcoholic versions are priced at £14 ($19). Guests can enjoy these limited-time creations in the hotel bar throughout the season.
