Core Of The Poodle, the small Pembrokeshire brewery on Market Street in Haverfordwest, has spent more than a year perfecting its latest beer. The new Pembrokeshire Promise pale IPA debuts on Thursday, May 22.

A Balanced Pale IPA

Owner and brewer Malcolm Herbert describes Pembrokeshire Promise as a pale IPA with a “very balanced pairing of top malts and premium hops.” He noted that, as a small brewery focused on their best-selling Haverfordbest, development time was limited but essential to achieve the desired flavor profile.

“It takes a long time to get to that point,” Herbert said. “I now understand the irony and reality of Pembrokeshire Promise, but I am sure we will be able to deliver it next week.”

Bar Concealed as Record Shop

Core Of The Poodle sells its beers primarily in its unique bar, which is disguised as a record shop. The venue opens late on weekends—until 8 p.m. on Thursday and Friday, and on Saturday nights—to accommodate local patrons.

Despite anticipation, some regulars remain skeptical about tasting the new brew. One long-term resident, speaking anonymously, remarked that although Pembrokeshire Promise has appeared on the beer list for months, “no one has actually seen it.” They plan to attend the launch but doubt they will “actually drink a pint.”
