Exhibition at Maison Assouline Celebrates the Timeless Appeal of the Martini and Its Craftsmanship

LONDON — Agostino Perrone, director of mixology at the Connaught Bar since 2008, has become a renowned figure in London’s cocktail scene, having crafted over 25,000 martinis throughout his career. Known for his refined technique—ranging from classic olives to lemon twists—Perrone recently unveiled a new twist on the iconic drink at the launch of his “Martini Icons” exhibition at Maison Assouline. The event featured martinis infused with fermented peaches and Belvedere 10 vodka, underscoring his innovative approach to this classic cocktail.

Perrone’s expertise extends beyond bartending; he is also an avid photographer, capturing candid moments of patrons and passers-by with his Leica camera. Commissioned by Belvedere to produce three photographs for the “Martini Icons” exhibition, which runs until June 20, Perrone’s work includes a black-and-white image of the Royal Ballet and Opera, a woman holding a drink on a spiral staircase, and a self-portrait. During the exhibition, guests can enjoy Perrone’s signature martinis at Maison Assouline’s Swans Bar.

The Italian mixologist credits the martini as central to his career and personal philosophy. “The martini cocktail is really my life because it has given me the opportunity to interact with people and learn about them,” Perrone explained. His journey in hospitality began abroad, driven by a passion for connecting with others through the art of cocktail-making.

Perrone draws parallels between mixology and photography, emphasizing the importance of precision, attention to detail, and capturing the right moment. “It’s about seeing everything around you—where we put a napkin, the garnish, and the degrees of the cocktail glass,” he said. Similarly, his photography captures fleeting moments that catch his eye, such as a striking image of two friends with their backs to the camera.
