HINDLEY STREET, ADELAIDE – A sophisticated new addition to Adelaide’s nightlife has opened its doors, with Bar Canopy transforming the former site of Stem Restaurant & Cellar into a lush, urban retreat tailored for wine aficionados and cocktail enthusiasts alike.
Located in the heart of the West End, Bar Canopy is led by esteemed sommelier Henry Bampton. The venue showcases a carefully curated wine list that balances approachability with excellence, featuring both standout local labels such as Honey Moon Vineyard and Eperosa, and rare international selections, including a coveted 1971 Conterno Barolo.
Rather than relying on industry jargon or premium price tags, the wine list is guided by a simple yet discerning philosophy: taste above all. Glasses start from $15, making the experience accessible to casual drinkers and connoisseurs alike.
“The response since opening has been incredible,” said Bampton. “We’ve already served countless cocktails, and the space has quickly become a favourite. It’s bringing a fresh energy to the West End.”
Complementing the wine program is a creative cocktail list developed by mixologist Lorenzo Di Pasquo. Highlights include the Coco Negroni—aged inside whole coconuts for several days to achieve a silky texture—and the Doppio Rosso, a bold variation on the classic Garibaldi, made with blood orange juice and a bespoke olive oil and lime leaf syrup. One of the early standouts, the Tea on the Beach—blending vodka, peach, and Earl Grey—has quickly gained popularity among patrons.
The bar also offers a concise menu of elevated snacks designed to pair with the drink selection. Guests can enjoy dishes such as kimchi toasties, grilled chorizo gildas, and French caviar served with crisps—fusing indulgence with a sense of fun.
Inside, the venue preserves elements of its predecessor’s industrial aesthetic, featuring polished concrete floors and exposed brickwork. These are now softened by verdant overhead greenery, evoking the gentle shade of a vineyard canopy and creating a serene, intimate atmosphere.
