Sketch Unveils Avant-Garde Cocktail Menu and Rare Wine Programme at The Glade Bar

Sketch has launched a new cocktail menu at The Glade Bar, showcasing a technically sophisticated and creatively reimagined selection developed in its dedicated on-site drinks laboratory. Spearheaded by Bar Director Martino Franchi, the offering features 21 cocktails that reinterpret classic serves through innovative techniques.

The menu is divided into three distinct sections: Roots, featuring traditional recipes; Alchemy, offering modernized interpretations; and Essence, presenting non-alcoholic alternatives. Each cocktail is crafted in three iterations to illustrate a progression from classic to contemporary and spirit-free.

Among the standout reimaginings is the Alchemy Espresso Martini, which employs distilled coffee to deliver a crystal-clear appearance while preserving the essence of the original. The Essence version incorporates Lyre’s Malt, tonka bean, orgeat, and espresso, delivering complexity without alcohol. This tripartite structure extends to other classics such as the Negroni, Rum Punch, and Gin Basil Smash.

The in-house laboratory, located within Sketch’s Mayfair premises, enables the team to experiment with techniques such as lacto-fermentation and milk clarification, allowing for meticulous ingredient development.

Complementing the cocktail programme, The Glade Bar has also introduced a rare wine and champagne selection curated by Wine Director Fred Brugues. This programme includes pours from acclaimed producers such as Egly-Ouriet and Jacques Selosse, now available by the glass through Coravin technology. Formerly exclusive to bottle service at the three Michelin-starred Lecture Room & Library upstairs, vintages like “Egly-Ouriet, Cuvée VP” and “Jacques Selosse, Initial” can now be sampled in smaller servings. The list is further bolstered by established labels such as “Pommery Apanage 1874”.

The drinks offering is accompanied by a curated menu of small plates, including truffled arancini, lobster rolls, and Cantabrique anchovies. The Glade Bar is part of Sketch’s multifaceted venue at 9 Conduit Street, which also houses the Parlour, the Gallery, and the Lecture Room & Library.

Established in 2002 by restaurateur Mourad Mazouz and chef Pierre Gagnaire, Sketch continues to operate as an intersection of culinary innovation, visual art, and music.
