UK rum distillery DropWorks has partnered with London restaurant Mallow to feature a new Coconut Daiquiri on its summer menu. Founded in 2023 by industry veteran Lewis Hayes, DropWorks operates out of Nottinghamshire and claims to be the largest rum distillery in Europe.
Clear Drop Rum’s First Venue Debut and Return
In its inaugural summer, DropWorks introduced Clear Drop rum at five Mildreds locations and two Mallow restaurants in London. This marked the brand’s first placement in a food-and-beverage venue. Two years later, Clear Drop makes a comeback at Mallow—this time as the star ingredient in the Coconut Daiquiri.
A Refreshing Twist on a Classic Cocktail
Mallow’s Coconut Daiquiri combines:
DropWorks Clear Drop rum
Falernum (a spiced syrup)
Coconut
Pandan leaves
Citrus
The result is a “refreshing” blend, balancing the nutty sweetness of Clear Drop with bright, tropical flavors.
Distiller’s Praise for the Collaboration
Lewis Hayes, DropWorks’ master distiller, said, “We’re so excited to see Clear Drop join Mallow’s summer line-up. Rapid Expansion Across the UK
Since its launch, DropWorks has expanded beyond London. Its rum is now available at The Stray in Manchester and Sister Ray in Liverpool. The distillery plans to roll out to hundreds of venues across the British Isles.
Earlier this year, DropWorks appointed former Diageo executive Graham Appleyard as CEO. Last month, the company announced its goal to triple growth by 2025 and become the UK’s preferred rum.
