Balmain’s The Dry Dock is set to deliver a culinary experience tailored for wine enthusiasts, as it partners with acclaimed Italian winemaker Enrico Sarotto of Roberto Sarotto Wines for a five-course, wine-matched long lunch.
The event, curated by Head Chef Ben Sitton, will feature a menu designed to complement eight distinctive wines from Sarotto’s Piedmont estate, including several recent releases. Guests will begin with a king crab tartlet paired with the 2022 Aurora Gavi — a fruity white named after Sarotto’s wife — followed by a refined yellowfin tuna crudo accompanied by the fresh and aromatic 2022 Arneis.
The pasta course will highlight chestnut mushroom tagliatelle, matched with a spicy and complex 2023 Nebbiolo. For the main dishes, diners will enjoy Hunter Valley roast duck finished with a Nebbiolo sauce, as well as a 9+ Tajima Wagyu scotch fillet, served alongside two vintages of Sarotto’s 2020 Barolos.
The meal will conclude with a luxurious selection of cheeses and honey truffles enrobed in Valrhona chocolate, paired with a robust 2018 Barolo.
Enrico Sarotto will personally host the lunch, offering insights into his wines and engaging with guests throughout the event. Tickets are priced at $190 per person, inclusive of all courses and wine pairings, and are available for purchase online.
