As construction and changes continue to reshape the landscape of downtown Denver, particularly along the iconic 16th Street Mall, one renowned restaurateur and chef, Troy Guard, is embarking on a venture he believes will inject fresh vitality into the heart of the city.
Guard, the chef and owner of Denver’s TAG Restaurant Group, has a vision for a place where deals are made and experiences are savored. “What happens here? People make deals all the time. So, ‘Done Deal’ it is. Let’s get it done,” he declared.
Nestled within the city’s tallest skyscraper, Republic Plaza, known for housing offices and business spaces, Guard is preparing to unveil a wine bar and small plates lounge by the name of “Done Deal.” This new establishment adds to his impressive portfolio of nearly a dozen restaurants in the metropolitan area.
Guard shared his enthusiasm for what “Done Deal” has in store, promising an enticing wine menu and a selection of specialty cocktails. While traditional hamburgers and steaks may not be on the menu due to space limitations, patrons can anticipate a delightful array of cold finger foods, including shrimp cocktails, sushi, salads, nuts, olives, and prosciutto cheese.
The concept for “Done Deal” materialized when the building’s owner, Brookfield, headquartered in New York, approached Guard. Their aim was twofold: to provide an amenity for the individuals working within the building and to draw in downtown visitors, contributing to the revitalization of the city.
Guard’s unwavering belief in downtown Denver’s potential is evident. He regards it as the pulsating heart of the city, and with “Done Deal,” he aspires to create a space where business deals are struck and the essence of downtown Denver is celebrated.
