“During autumn, I gravitate towards whiskies, rums, and brandy, infusing them with autumnal flavors such as apple cider, herbs, and spices,” shares Asare-Appiah, reflecting on his seasonal cocktail creations.

Recently, Asare-Appiah was captivated by a local hero ingredient, fynbos, renowned for its intense herbaceous profile and distinctive floral notes. Embracing this newfound discovery, he envisions it as a perfect complement to chilly afternoons, offering a unique twist to classic cocktail recipes.

“Fynbos has become a source of inspiration for me. Exploring its diverse array of herbs and spices, I aim to incorporate these dynamic ingredients into my cocktails, tapping into the essence of foraged flavors,” he explains.

Hailing from Ghana but having spent significant time in the UK and now residing in the US, Asare-Appiah, alongside business partner Mark Talbot Homes, is set to introduce a continental bartending experience in South Africa. Their endeavor kicks off with the bi-annual Ajabu Cocktail and Spirits Festival, uniting local and global bartenders in a celebration of craftsmanship and creativity.

“Our mission is to invigorate Africa’s bar and hospitality industry, positioning it on par with global counterparts,” Asare-Appiah affirms. “By fostering collaboration and discovery, we hope to see local ingredients like fynbos showcased on cocktail menus worldwide.”

Reflecting on his journey in the bartending realm, Asare-Appiah’s career highlights include co-hosting the Discovery Channel’s Cocktail Kings, managing award-winning bars, and receiving prestigious accolades such as Best Man Ambassador of the Year by Tales of the Cocktail in 2016.

Returning to South Africa holds a special significance for Asare-Appiah, as it symbolizes a homecoming to where his bartending odyssey began. Recounting his humble beginnings on the Greek island of Lemnos, where a serendipitous encounter with bartending ignited his passion for mixology, he acknowledges the transformative power of the craft.

“As an African, I’ve always seen the potential of the continent, and South Africa serves as an ideal canvas to showcase global talent and innovation,” he reflects, honoring the memory of his late friend and fellow bartender Douglas Ankrah.

With each cocktail crafted, Asare-Appiah’s journey comes full circle, embodying a fusion of heritage, creativity, and the relentless pursuit of excellence in the art of mixology.
