Brendan Pratt, however, hasn’t left the food scene entirely. He’s ventured into the world of coffee with his Margaret River coffee business, and now, with his characteristic cheerfulness, Pratt has taken on a consulting role at an exciting new project set to grace Kent Street, Busselton, in December.

This venture is the brainchild of John Parker, the mind behind notable establishments like The Royal Hotel, The Standard Bar, and Dandelion. The eagerly anticipated establishment, named “The Busselton Pavilion,” holds great promise, and Pratt is thrilled to be a part of its creation.

In Pratt’s own words, “I’m helping JP find the right people, particularly in the kitchen, and then helping build a really good culture and a really good menu.” With his culinary expertise and dedication, Pratt aims to ensure that The Busselton Pavilion becomes a beacon of culinary excellence in the region.

Among the exciting additions Pratt has in store for this new venture is a substantial French rotisserie, which is currently en route to Busselton. This addition promises to elevate the dining experience and add a touch of gourmet flair to The Busselton Pavilion.
